It has been 40 days since part 1. The Limoncello is nearly complete.
After removing your aged vodka it should have a neon tint to it.
The next steps are really simple. If you use more or less Vodka you can double up or half the recipe.
3 cups sugar
6 cups water
Pour Vodka through a strainer and into a large bowl. Reserve the lemon zest.
Mix sugar and water and bring to a boil on the stove to create a simple syrup.
Pour the syrup over the reserved lemon zest into a bowl, and let cool.
When the syrup mixture is cool. Mix it with your Vodka. Pour everything into glass bottles with airtight lids. Store them for at least 5 more days.
Then chill and serve.
